⚙️ The Physics of Flow

When water meets coffee grounds, it follows the path of least resistance — a phenomenon called channeling.

Although a ground coffee bed can be flat and uniform there are areas in the paper filter with different resistance due to the non-woven structure of the fibers. This phenomenon is creating micro areas with different flows, and the result of the flow is unstable. Some areas of the coffee grounds will over-extract while others stay under, especially in flat bed baskets. Of course, each subsequent paper filter, each new package, each new batch will not be identical but similar, and this similarity on a microscale loses its value, as any comparison ends in non-uniformity.

Controlling flow and factors participation :

  • Resistance – created by grind size (uniformity) and depth
  • Symmetry – the filter’s design and specifications.
  • Turbulence — how evenly water interacts with the coffee bed.
  • Pressure differential — the force that drives water through coffee & filter
